Leftover Vegetarian Brinner

You guys ever have those times where you have some random ingredients you need to use up in your fridge?

I had that happen a little while ago and I ended up throwing together this delectable sandwich meal.

I sautéed up some bell peppers and red onion with salt and chili powder, fried up an egg, and toasted up my last kaiser roll. I threw some cheddar cheese, fried egg, and bell pep/onion.

I baked up some fries for giggles and had some kale to balance it all out 😅

The runny yolk really took this sammy up a notch. Totally messy and completely worth it!

Breakfast for Days

Can I tell you something?

I sometimes (read: a LOT of the time) take pictures of my breakfast to do a What I Eat in a Day post, but I always forget by the time snack time or lunch rolls around.

Instead of stressing about that I figured I would bring together all my recent breakfasts and make a post of one my favorite meals of the day–the other being dessert, of course!

If you give me tortillas, cheddar cheese, and eggs I can give you breakfast. It may come in the form of tacos….

This “breakfast snack” was because we had just worked out, still needed to shower, and were planning on going to brunch. Just FYI, if you ever see a brunch post in here there’s a 99.999% chance I have had a “breakfast snack.”

 

TBH it was a great snack–not the most beautiful snack, but tasty for sure!

I needed some spice in my life so I added some hot sauce to this next breakfast sandwich

And as it so happens I also enjoy English muffins as vehicles to get egg and cheese into my mouth 🙂

Vegetarian FDOE

I may have said this before but I love reading/watching full day of eating blogs/vlogs. They are just fun and it always gives me ideas for meals!

I had no idea that this was going to be a vegetarian post to be completely honest, but this is a pretty typical day of eating for me when I am at home.

For breakfast I made some yummy tacos with roasted potatoes, eggs, and salsa. Side spinach always!

Lunch was this nommy grilled cheese on sourdough. I actually ended up eating spinach straight outta the bag while this was cooking because I was so hungry so don’t be alarmed by the lack of green 🙂

When it’s winter you will find us snacking on cuties because they are in fact cute and also delicious!

Dinner was most delicious with this mashup of Gardein multigrain ‘chicken’ strips, Brazilian cheese bread, baby carrots, and of course spinach! I had some guac on the side for dipping…

Dessert was this flan that the hubs surprised me with! It was from a local Mexican grocery store and man was it good.

A Vegan Lunch

It may be hard to tell from my posts, but when at home I tend to eat vegetarian for the most part. I enjoy eating lots of veggies and I find that my body does pretty well on it 🙂 We also enjoy our fish and burgers (as you may know if you’ve been reading my posts), but I think it’s all about balance.

All of this to say that I may have stumbled upon one of the best vegan joints I have ever been to.

Let me start from the beginning…like every good story, this one starts with doughnuts. There has been this vegan doughnut place I have been wanting to try and so we set out to do just that, but we also wanted to grab some lunch.

We came across a place on Yelp called Organix. It’s a little vegan grocery store/vegan restaurant (kombucha shot for overtime I say vegan?). It has 3 wooden picnic type tables and benches to sit down and eat (you order at the register).

We ended up wanting everything on the menu, but went with the Chicken Bacon Ranch, Jesse’s Taco, and the Barbacoa Taco.

We also ended up getting some vegan jerky to try out while we waited. The flavor was like jerky, but the texture was very soft-the hubs seemed to like it.

Now on to the rest of the food ( insert all of the heart eye emojis here)

The CBR had vegan chicken, coconut bacon, vegan ranch, grilled onions, lettuce and tomato on sourdough.

The Jesse’s Taco was a corn tortilla filled with mushrooms, grilled onions, bell pepper, cabbage, salsa, and chipotle aioli.

The Barbacoa (my fave) was slow cooked shredded jack fruit, cabbage, crema and pico also on a corn tortilla.

The food was incredible…I only wish we lived closer! That’s all for this post, but that doughnut post will be coming soon so keep an eye out 😀
