Lubbock and Houston

During this whole trip we didn’t stay at a single place for more than a night. Even if we spend a couple of days in the same city we were hopping houses, hotels, and air bNb’s. It was crazy!

Because of that I didn’t get too much from Lubbock. We made it there around evening time from Austin and had enough time to shower and get ready for a dinner.

We went to a Cajun restaurant called Razoos, I think. I got a po’ boy with tilapia and the hubby got a salad. I didn’t take any pics since it was a part of B’s interview process. 

You guys by the time we left the restaurant it was SO cold! We stopped by Target to grab a few things and rushed home. The next day we could see snow flurries! We were not prepared for the cold!

The hubs dropped me off at Starbucks and he went to his interview. I ordered a tea and a little while later got their egg sous vide and an everything bagel. 

It was my first time trying the “egg bites” and it was pretty good! They were soft and fluffy on the inside (almost souflee like?) and the outside was a little crispy which I loved. Besides eating I was able to schedule some blog posts and catch up on reading some of your posts…it was quite productive!

Once the hubby got done we had a very long drive ahead of us to Houston. We drove and drove and ended up stopping for some Taco Bell. We finally made it to our air bNb and it was so cute!

The couple that greeted us were so friendly and I loved our room! It was beach themed and cozy. We knocked out as soon as our head hit the pillow 🙂

The next morning we packed up and headed out to meet up with some family. I was starving so we stopped to grab a Banh Mi for me. I know it’s a weird thing to have for breakfast, but nothing else sounded good. Honestly I would have had the pho, but it is not great car food.

We met up with fam at a place they suggested called, Snooze! Can you believe it? I didn’t realize Snooze was a chain, but it’s also in Houston! I was still full from my sandwich so I ordered the OMG french toast, fruit, and coffee. I only had a piece of the french toast and shared it with everyone else!

The hubby got a protein packed bowl which looked and tasted amaze! I tried a couple of bites 🙂

We visited some more family before heading out again to check into our hotel. We got stuck in some traffic, but made it safe and sound.

I went and worked out a bit and then we got Chipotle for dinner. How pretty is that tree that was around Chipotle! They had a bunch decorated and it looked so beautiful and festive!

We both got bowls and it was warm and delicious and totally filling. Noms! We packed up as much as we could since we needed to head out after hubby’s interview the next morning.

While hubs headed to his interview I decided to workout again in the hotel gym. Afterwards I headed to breakfast at the hotel lobby/restaurant area. I didn’t get a pic before I started eating, but I had a piece of veggie frittata, lots of servings of fruit, and some potatoes. 

I decided to check out the waffle maker and made my own waffle. It was so fluffy and crispy and absolute perfection. I also have some fruit hidden under there 😀

Once the interview was over we drove over to the airport to return our car and head back to LA.

I hadn’t had lunch and hubby needed a snack so I got a sandwich from Which Wich and he got a spinach feta egg white wrap from Starbucks. The sammy was wheat with turkey, cheddar, ‘cado, onion, lettuce, and tomato.

It was YUM! We had some time before our flight so we wandered around the airport looking at the stores and our options for dinner. When it was almost time to head on we grabbed some dinner from Panda Express for our flight.

 

It was delicious and the only pic I have is terrible since it was so dark! We made it back home pretty late and ended up sleeping within an hour of arriving. We were both beat!

Austin

Our drive from OKC to San Antonio was a long one, but lucky for us Austin is pretty close to San Antonio so it was a quick trip!

We made it to our adorable airBnB and settled in while waiting for B’s brother to arrive from OKC.

We had made plans to hang out with him while we were in Austin. Once he got there we (I) decided tacos were much needed.

We headed to Juan in a Million. We were all starving, but once seated we were greeted with tortilla chips and salsa. The hubs ordered some guac too! We annihilated one basket and she came back with another.

I had to stop eating the chips because our tacos started coming out. I was expecting smaller sizes of tacos, but these were pretty big. Eyes>stomach 😅

I don’t remember which ones we got, but they were all pretty good!

We ended up walking around the area for a bit. They had a lot of little art galleries set up so it was really cool!

We were pretty ready for dessert by this point. I wanted to check out Shipley’s so we went. It was really late in the day so they didn’t have much. I ended up grabbing a glazed to try and it was simply okay.

We were told that they do hot glazed in the morning and I imagine that is way better!

We dropped into Amy’s for some ice-cream. Their Mexican vanilla is very popular and I can see why. It’s so flavorful!

I ended up getting the Oreo which is their Mexican Vanilla with crushed up Oreo. It was fantastic!

We left and walked around a mall until our improv show. We also checked out downtown and some other popular areas.

Austin is so beautiful! I love the neon signs and string lights that are at every restaurant and bar!

After the improv show we grabbed pizza at Homeslice! This place was so cute, but dimly lit.

Each of the menus had a different meme on the front. I thought they were fun!

You guys, it was a cold night and hot pizza definitely hit the spot.

I don’t think any of us could imagine walking out again to find dessert so we had chocolate chip cookies and milk at Homeslice too 😋

These cookies were fat and chewy, but would have been over the top if they had been just a little warm.

I fell asleep in the car on our way back to the airBnB. We crashed so hard once our head hit the pillows.

Our next stop was Lubbock so we got up and grabbed some gas, coffee, and Torchy’s for me before heading out.

I got the breakfast one with brisket in it…the Wrangler I think. I promise this tasted better than it looked!

Fish 101

I wasn’t sure about writing this post because to be completely honest I did not have a meal at Fish 101. I was pretty full from brunch, but I am always down for a foodie adventure! This place has 4.5 stars and 902 reviews on Yelp…I needed to go.

We went with a large group of friends and there was a good variety of options to choose from. They had everything from poke (which hubby got) to fish and chips (which a couple of our friends got.

The poke I had a couple of bites of and it was really delicious and flavorful. I liked that the fish tasted fresh and that the sauce on top let the fish shine through.

Our friends that got fish and chips seemed to really enjoy it and thought it nice and flaky. Other friends got shrimp tacos which looked crunchy and fresh. One friend got the burrito and man was it massive! She shared it with her hubby and she was still full.

If we every go back I will for sure save some room for this place, but it was too good of a spot to not tell you about. I totally loved the rustic vibes in there and it was filled with people!

Vegas

A few weeks ago we went to Vegas for a quick little trip. I have very little to say other than Vegas is gorgeous and we definitely need to go back for longer than 24 hours next time so we can take it all in!

It was a whirlwind of a day and it’s something I will always treasure especially since I got to do it with my best human. Love you babe!

Full Day of Eating on a Saturday

I am so excited to bring you guys along for a FDOE! This particular Saturday was especially delicious and filled with a lot of yummy treats 😍!

We started our day with a late brunch from Wake and Late. I got a carne asada, egg, cheese, avocado, pickled jalapeño and potato burrito while the hubby got a egg white, spinach, pickled jalapeño, onions, avocado, and red pepper burrito. They also grill the burrito after to make it nice and crunchy!

We both enjoyed our very filling burritos and needed something sweet 🙂 we ended up sharing this nutella macaron from a random French bakery.

We ended up going to Century City Mall to find a suit for hubby and while there we noticed that 85° Bakery was open. I could not not check it out you guys. That would have been a major food blogger sin, right?

I knew you would understand!

We got the honey cake, coconut roll, and milk bun. Nothing was super sweet, but everything was delicious! If you have one of these around I would definitely recommend checking it out.

We didn’t eat it all and saved some for dinner dessert 😉

We walked around the mall for a little while longer and then left. I was super tired and the hubs was too, I think, so we both napped. I honestly have no idea how long we were out for, but it wasn’t more than an hour?!

For dinner we had decided on wings from Big Al’s Pizzeria. We headed on over because it’s a little over an hour from where we live. I’m definitely glad we went when we did because it was packed in there, it took about an hour to get our food, and another hour to get back home with it.

We ended up getting the buffalo, the dragon, and the Jamaican. The dragon was the spiciest and the most flavorful. The Jamaican was sweet and sticky. The buffalo was a really rounded buffalo flavor-not too vinegary or too spicy.

We really enjoyed the wings, but as always needed dessert. We snacked on chocolates, the rest of our 85° Bakery, and some grapes because #health.

Some fall favorites

I have not been hating this fall thing that’s happening. It still gets nice and warm during the afternoon in LA, but mornings and evenings have been a bit chilly. Because of that I have been feeling all of the fall things!

My first favorite is something I’ve been looking for, for a LONG time. When you’re a shmall framed human it’s hard to find leather/jean jackets that properly fit and won’t break the bank. I finally found this beauty at TJ Maxx. It fits nicely, has pockets on the sides for your hands, and was $20!

During the same shopping trip I found this reddish brownish burnt orangey polish from OPI. I probably don’t need another polish, but I honestly don’t have a shade like this and it seemed like it was meant to be 😀

Brunch with bae has always been and will always be a fave..honestly any meal with him will be a fave. This particular meal was from Leo & Lily’s. It was their turkey club and their crunchy french toast.

I have been kinda loving and living in jumpsuits as of late. They are so comfy and you can pull one on and look put together as long as the fit is right. This was another TJ Maxx find. Maybe I should have named this a TJ Maxx haul 🤔

Breakfast burritos are perfect for fall! When it’s chilly outside I have a hard time eating raw veggies. So if I can sauté them up and wrap it up in a tortilla with some scrambled eggs, cheese, and hash browns…why not?! Also it’s super delicious and filling!

Obsessing specifically over Fage’s 2% Greek yogurt. I normally use the 0% Greek yogurt, but the hubby had been mixing the two. He had some 2% leftover recently and I was trying to use it up and fell in love. It’s super creamy and it’s not as tart as the 0%. Super impressed! Will be sticking with the 2%!

These sunnies were a find at Francesca’s. My favorite pair of sunnies recently broke and I’ve been on the hunt for a pair. Just like finding jean jackets are hard for me, finding sunnies that fit my face are difficult…maybe I’m just picky! Who knows? I saw these, tried them on and loved them. They’re so lovely!

Recent Eats

Hey sweet people!

I am excited to share with you some meals I have on my phone that I haven’t shared in any of the other blog posts. These are meals I probably captured with the intention of having a full day of eating, but it didn’t happen #badfoodblogger

We had some delicious sushi at Sushi Enya with some friends. Sadly, we only got pics of a couple of rolls and these were actually captured by hubby I think. After this we were so busy eating and talking that few pictures were taken. Oops!

One Sunday after a mediocre brunch we decided to cook at home. We thought about it and decided on steak and cauli. The hubs made a gorgeous steak and I roasted up the cauliflower for a pretty simple but tasty dish!

I usually prefer a savory breakfast, but always need something sweet after–usually fruit. I decided to skip breakfast dessert and just have something sweet for breakfast by way of these gluten free banana pancakes. I know I’ve posted about these and they are quick, yummy, and filling.

This delicious looking salmon was our dinner one weeknight that I was off. It was a fun dish to create and lovely to look at too!

We did go back to Malibu Farm Pier Cafe and get some brunch which was a little underwhelming compared to their lunch, but I was too hungry to go anywhere else. I got this salmon hash dish and hubby got an open brussels sprout omelette.

A few things I do to make cooking easier

I wrote a post a little while ago about what I do to make my life a little simpler and I thought it would be fun to share one that is specific to cooking. Leave it to me to bring food into anything and errything 😀 sorrynotsorry.

The days I am off and hubby works I try to cook an actual meal. I try to plan these meals out at the beginning of the week so I know what and when I need to get things. For example, I may grab cauliflower to go with our salmon on Friday, but I wouldn’t get the salmon till later in the week.

Hubs and I try to knock out our big grocery shopping in one day usually at the beginning of the week. Mind you, there’s only two of us so this isn’t too difficult. We grab our fruits, veggies, and proteins that have a good shelf life to keep us stocked for the week. We’ve actually become really good at this. At the beginning of the week our fridge is full and packed and by the end it’s pretty empty.

It’s a carrot hotdog!!

I prep as many ingredients as I can earlier in the week. I think I talked about this a long time ago…I don’t cook things up and put them in ready to go containers. I will cut up my veggies I need for the week (that won’t go soggy or bad) or marinade my chicken that I will be using in the next couple of days to make things simpler.

I try to utilize my cooking appliances. Again, keep in mind I am cooking for two people and have never really had to cook for a crowd so this might be easier for me than some of you. If I am planning on using the oven to roast veggies I will try to make my protein on the stove or vice versa. If I am making a one pan chicken and veggies then I don’t think about this, but if I’m not this is a way I can make sure things get done together and nothing is sitting around getting cold.

When I am cooking I clean up as I go. This prevent cross contamination (YAAY!). It also means by the time dinner is cooked I am done with a majority of the clean up and I can sit down and enjoy it (double YAAY)!

 

One Pan Chicken and Veggies

I love a good easy, dinner during the week but who doesn’t? I’m not going to give you a recipe or go through a step by step with you because there are a MILLION recipes out there for one pan chicken and veggies, trust me!

I will tell you that I used a chicken thigh because it is a more forgiving part of the chicken. If you overcook it a little, it won’t tell your dinner guests 🙂 I did take the skin off, but leave the bone in.

I used veggies that would be okay with hanging out in the oven a little while longer like potatoes, carrots, and red onion. I added in broccoli because I don’t mind my broccoli a little charred and it is supposed to be a one pan meal, right??

This meal is even better because you can use whatever marinade/seasoning you want. If you’re craving Indian you can do curry powder. Mexican Monday? Taco seasoning maybe?! I think you get the gist.

I found a balsamic vinegar marinade on Pinterest and ran with it because it had some ingredients that I needed to use up and it sounded delicious!

This turned out very well! I love roasted veggies and the chicken thigh was juicy and flavorful.

Okay peeps it’s not that serious! I’m not making a cooking video or proclaiming myself a recipe blogger. Lord knows I am not that and let’s face it I am awful at creating recipes since my measurements involve eyeballing, pinches, and to your tastes a lot of the time.

I do like to cook, but sometimes I forget! It’s a problem, I know.

I have picked it back up recently and have been making things other than breakfast burritos and cheese quesadillas (don’t get me wrong, I still make those).

For dinner one night I made an Indian spiced salmon and some roasted brussels sprouts. Honestly, I decided to make this because salmon and brussels sprouts were on sale and I had all the seasoning I needed at home.

Actually, my recipe decisions this week were all based on items that were on sale 🙂

Back to the salmon and brussels sprouts:

I would start with getting the brussels in the oven since they will take longer to prep and cook. The fish takes no time at all once it’s in the pan and very little prep time.

Preheat oven to 425-450. Grease a baking sheet. Chop up your brussels to bite size pieces.

Drizzle some EVOO, salt, pep, chili powder and any other seasoning you would like and mix together.

I take off my rings and do it with my hands because I feel like it coats the pieces better, but that might just be something I made up in my head.

Throw it in the oven for 30ish minutes until it is done to your preferred crispiness.

You can either make your own curry spice blend (literally hundreds of recipes on they interwebs)

OR

You can buy a pre-made version.

If you’re not a curry person you can use cajun seasoning, taco seasoning, whatever fun spice blend you want.

Once you’ve decided and are ready to cook up your fish sprinkle on salt (unless your seasoning has salt) and seasoning and gently pat/rub it in. While I was seasoning my fish I had some chopped garlic and jalapeño sautéing up.

If you skip the garlic and jalapeño part just make sure your pan is well greased and hot before adding your fish. This will get the skin crispy and blacken the meat of the salmon when you flip.

Once the salmon is in the pan keep an eye on it. When the fish gets flaky, you are done cooking. Resist the urge to keep it on heat because you don’t want overcooked, dry salmon. THAT is actually the worst. Trust me, I know!

This fish ended up being perfectly spiced, crispy, flaky and juicy. The brussels sprouts were a little burnt (but that’s how I like it), and added a nice textural contrast to the fish.

This is something you can whip up on a week night especially if you have your brussels sprouts chopped up and ready to go.

This is how a “recipe” plays through my head when I am cooking. I figure out what flavors I am craving and play with seasonings to get what I want.
