What we’ve been upto

We have been blessed to be able to continue working so our routine has somewhat been the same.

That being said we are definitely not out and about so we have found different ways of keeping occupied.

I mentioned one of those in my last post-cooking. It’s been a great way to get creative and excited. We have to eat so why not have fun with it?

I dug out some puzzles that we hadn’t attempted to help with any boredom. Mind you it’s been a week or so and we still haven’t gotten to the puzzles, but it’s just having them easily available and in easy access 🙂

I did buy a few books that I am looking forward to reading (again, haven’t started) but good for a rainy day. I know there’s Kindle and Audible, but I have always loved a good book in my hand. There is something so satisfying about turning the actual pages…just me?

Cleaning-I’ve always been a bit of a neat freak. I like my space clean and uncluttered. Ask my husband, it drives me absolutely bonkers to not have stuff in its place. Besides just the usual I do think it’s a good time for some decluttering and getting rid of things you don’t need.

Working out and walks have truly kept me going. I will be honest and let you know that recently I haven’t been as motivated to workout but if I am home I still do it. It gives me a good boost of endorphins and energy that I really need right now.

My husband had the genius idea of watching the Marvel movies and found a website showing what order it is best to watch them. We both LOVE these movies and the great thing about them is 1) they are each about 2 hours or more and 2) they are so empowering and gives you that feeling of you can do anything. Right now I think both of those things are kinda nice.

Veggie Fried Rice

Hi all you lovely people!

I hope you guys are doing well! I know it’s a weird time and we’re all trying to make it through, but just know that we got this!

At our home, on our days off, we have been filling our time and our tummies by doing a lot more cooking. It’s been a lot of fun and it helps keep us distracted 🙂 While day dreaming recipes we could do for this last weekend, we realized we have some ingredients to make a veggie fried rice.

I’m using the term “fried rice” loosely here because even though there was rice in here it was mostly an abundance of veggies.

We looked up some fried rice recipes to get the general idea and got to cooking. We chopped everything up to bite size pieces.

We sauteed the onions along with the broccoli and these tofu nuggets (extra protein) first. After cooking for a few minutes we added in our veggies that would not need as much time.

After all the veggies cooked we took them out and started to cook our rice. We added some ginger, garlic, and chili flakes to the pan, a little while later we added in the cooked rice. I used a packet of Jasmine rice I had left from Trader Joes.

We stirred everything in together at the end to incorporate all the ingredients and took it off heat to add soy sauce. I know you’re thinking, “where the heck is the egg?” We decided instead of having it mixed in with our fried rice, we’d rather have an egg on top.

We cooked up our sunny side up eggs and topped off the fried rice. This was honestly really good and had so many colors in it from the veggies that it was nutritionally dense also.

We had some leftover which I ended up re-heating in the pan the next day for breakfast and topping off with an egg and sriracha. I did end up adding in some extra kale-it wilts away so quickly and I love the extra green on the plate 🙂

The new norm

Hello Friends,

So I haven’t actually written up a post in a minute because I had some that I had scheduled earlier. I have a couple of more scheduled posts that will be coming out, but I wanted to interrupt because there’s so much craziness happening in the world right now.

The hubs and I both work in healthcare so we have continued to go to work. I’ve only ever worked inside of a hospital (never a clinic or any other facility) and we are always taught to be flexible and keep moving along with change. The virus is definitely sharpening that skill in all of us.

In terms of day to day life we have been having way more meals at home. We’ll order out a couple of times a week just to change it up and not go completely crazy. We are also super lucky to live within walking distance of a couple of grocery stores so we can get our exercise when we have to get more groceries.

Speaking of exercise-that’s been a big change too. I love my workouts at home but I love switching it up with the gym. Since our gym has been shut down I’ve been trying to doing my HIIT sessions and tried to go for a jog today. Sadly running is always lousy for me with flat feet and shin splints so I need to figure something out.

I do think I will be making the most of the free workouts on YouTube and including some yoga for a little change up. We have been trying to get in some walks-again for sanity and fresh air.

There’s so much unknown and so we’ve been trying to keep somewhat of a routine and maintain our home as a safe and positive place for us to retreat to.

Cookies and Closings

The week of October 13th was an exciting one to say the least! It was a busy and odd week that kinda ran together and felt super long at the same time. To sum it up there were cookies and we (finally!) closed on selling our house!!

We tried a new make your own pizza place on Wednesday called Pizza Press. It was delicious, but I would pick Blaze any day of the week!

On Thursday came some cookies we ordered! We had to try out some of Bang Cookies new flavors (and some oldies, but goodies). We waited till the weekend to try them, but they were delicious none the less. We wanted to try all the flavors so we only ate half each and froze the other half.

Thursday is also the day we got the text confirming that we had finished the process of selling our house! It was a very bittersweet moment. We obviously had loved our little home in the Valley and put a lot of effort into making it go from house to home, but we were very happy and relieved to have finished the selling process.

This was the first home we bought together and boy did we learn so much! It was quite the journey ❤️

I was also working Thursday and Friday so it was a bit of a blur!

Our weekend was kicked off on Saturday with a workout and breakfast at Denny’s. We both ordered the same veggie sizzlin’ skillets. and shared half of a pumpkin crackle cookie.

We walked around and enjoyed the gorgeous weather and walked into a Barnes and Noble. I headed into my favorite section which happened to have some really interesting and funny finds.

We also did some grocery shopping so our Sunday selves would thank us 🙂

After dropping off groceries and dropping in some laundry we headed out for a nice walk and some caffeine.

When we came back we went to TJ Maxx and got this gorgeous, fluffy blanket from TJ Maxx and some fun wrapping paper from Target!

By the time we came back we were in much need of a snack so I had some TJ’s Harvest Chili and sourdough toast. We may or may not have had half of this cinnamon whiskey crackle…by “we may” I mean we definitely did.

I finished up laundry while hubs wrapped up a present and we enjoyed some In n’ Out and more cookies for dinner!

Roses and Thorns

Helloooo…

The title of the post might not make much sense unless you’ve done roses and thorns. It’s basically where you talk about your rose (highlights, a good thing that happened) and your thorn (downer of your day).

This is not a particularly juicy post, but I do find it therapeutic to sometimes get out onto paper/blog what’s running through my head.

On Thursday I have my Austin post scheduled and it’s not the most complete overview of our trip in Austin because 1) that trip was rough 2) I’ve been trying to take a breather from taking pictures of everything.

After the NY posts I hit a wall-like a major wall. I did not want to write another post or take another picture so I tried to not force it and only took pics of what I wanted when I wanted. It was great, but I do have some regrets because some great fun was had and some delicious food eaten.

Giving myself that time though made me realize why I started doing this in the first place and helped me realize how much I do love and enjoy it.

During the Austin post I don’t talk much about the “series of unfortunate events” as I think of it in my head. Mostly because I think Austin is a great city and just because we aren’t meant to be there means absolutely nothing.

The series of unfortunate events include, but are not limited to our house being in escrow when we left LA and the buyer pulling out and my dad being in the hospital. The cherry on top was returning to LA, sitting in 1 hour and 40 minutes of traffic with a pretty bad uber driver. The sprinkles on the frosting had to be being locked out of our house with our luggage because during a showing or inspection the lock we had taped over to prevent someone from locking was locked.

You guys, that’s not even all of it, but I think burdening you with that is more than enough.

All of that being said I am so grateful to be back at home, to have a great real estate agent who I know is handling things, secured an apartment for our next move to San Bernardino county, knowing my dad is going to be okay, and having a pretty great husband to help carry the load.

Vegas

A few weeks ago we went to Vegas for a quick little trip. I have very little to say other than Vegas is gorgeous and we definitely need to go back for longer than 24 hours next time so we can take it all in!

Changing It Up

Hello my sweet friends!

I just wanted to chit chat with you guys about some things…

First, I haven’t been feeling the most inspired or excited about blogging *gasp! I remember when I started I was so excited and nervous and it was just a fun, creative outlet. Don’t get me wrong…it still is, but I also feel like I’ve hit a wall.

I want to be consistent in my blogging and if I’ve always let you guys know if anything changes with my usual MWF so this is me letting you know 🙂 I think I need a change so I am going to start posting Mondays and Thursdays.

Secondly, I still LOVE food and I can talk about food to anybody for hours and be perfectly content. Sorry to all my dear friends who listen to me ramble on about the chewiness of a cookie for an hour, but I will probably continue to do that on this blog-lucky you guys 😉

I will also continue to talk about anything else that makes me happy including, but not limited to healthy, exercise, day in the life, beauty, skin care, and fashion (post coming Thursday #plug)!
