Meals Lately

I’ve been so busy posting about our trip, but that doesn’t mean that I have forgotten to take snaps of food we’ve been eating since being back home.

I won’t lie most of it is home food and I don’t know if that’s interesting to you guys, but that’s what I’ve been eating so that’s what I’ve taken pictures of ๐Ÿ™‚

Let’s jump in!

This first meal was made in a hungry rush! I made a bean and cheese quesadilla and added an egg on top to make it “breakfast.” I feel like you could make anything “breakfast” if you add an egg to it-anyone else?

Donuts for dessert are always highly appreciated in this household. We adore SK Donuts! They have such soft, fluffy yeast donuts and they have a good variety of cronuts too!

This next meal was homemade burgers and fries! Such a simple meal, but so yummy ๐Ÿ˜‹

We happened to be at Century City and I could feel my blood sugar crashing so we stopped by Eataly and I had half of this for a snack. It was a cacio e pepe pizza and it was E.V.E.R.Y.T.H.I.N.G.

Quick meals are the theme of this post because to me nothing cooks quicker then eggs and peppers…noms! 20181127_123856

These apple chips were breakfast dessert one particularly ravenous day. I really enjoyed them! I don’t remember ever having apple chips other than in the Fuji apple chicken salad from Panera and I can say I am a fan!

Snooze

We were in Carlsbad with some friends a few weeks ago and hubby had a meeting to be at so myself and friends went to brunch. We ended up going to Snooze in San Diego-it was a 30ish minute drive from where we were, but it was worth every minute.

I was craving something sweet and lucky for me they had some great options to pick from. A friend and I split the pancake sampler and a OMG french toast.

For our pancake sampler we got their Smashin’ Pumpkin, Blueberry Danish, and their pancake of the day which was an apple/caramel situation.

The OMG french toast was incredible. It was a brioche bread filled with mascarpone and topped with vanilla creme, salted caramel, strawberries and toasted coconut. We left off the caramel on this one, but didn’t miss it one bit. It was sweet and the toasted coconut added lovely texture to the soft, pillowy french toast.

The Smashin’ Pumpkin was the favorite in the pancakes, but all of the pancakes were fluffy and delicious. I wouldn’t recommend the Blueberry Danish-it was the least favorite and I do love bluebs an awful lot. I think if I hadn’t had the other two pancakes I would have liked the blueberry one more, but in comparison not that great!

Our other friend got a savory dish and loved it too! This place has amazing reviews on Yelp and it was true to it’s ratings. We actually had to wait an hour before getting seated, but I would still come back because I thought the food was that good!

If you ever come to San Diego you need to stop by for brunch!

 

Leftover Vegetarian Brinner

You guys ever have those times where you have some random ingredients you need to use up in your fridge?

I had that happen a little while ago and I ended up throwing together this delectable sandwich meal.

I sautรฉed up some bell peppers and red onion with salt and chili powder, fried up an egg, and toasted up my last kaiser roll. I threw some cheddar cheese, fried egg, and bell pep/onion.

I baked up some fries for giggles and had some kale to balance it all out ๐Ÿ˜…

The runny yolk really took this sammy up a notch. Totally messy and completely worth it!

What is your favorite way to use up odds and ends?

Snacks I’ve been loving

The snacks I love change a lot, not because I stop loving something but because I find something else or my cravings change.

During the summer I love fresh fruits and cold, crisp veggies while fall and winter I prefer warmer more comforting things like hot cocoa or a small bowl of soup.

Recently my snacks have been leaning more towards the sweet side since my cravings have been more on the sweet side.

I’ve been eating fruits like grapes, berries, and these yummy figs. I love the crunch of the seeds that are inside and the beautiful mild sweet flavor.

Dark chocolate almonds help satiate my sweet tooth and keep me full a little longer with a little protein punch.

This last item is more of a dessert snack (whatever that means). I found these wafer cookies at Eataly and they were on sale. I got a vanilla and hazelnut flavor-LOVE both. They are light not overly sweet.

Meals with Friends: Sage

This is a little mini series I am currently doing that has to do with some fun eating we’ve been doing with friends. Here is post one and post two.

Out of the three restaurants that we had been to this one may have been my favorite! It was all vegan errything and it was amazing.

This restaurant was picked by the friends we went to lunch with and hats off to them because Sage was everything I wanted/needed and more.

They had kombucha on tap so we got a glass to share between the hubs and I.

We also ordered some nachos for the table so we could munch over the menu. These nachos were made with delicious, fresh tortilla chips, jackfruit (as the meat), pickled veggies, guac, and cashew cheese. Everything about this was incredible and delicious and so satisfying.

It was crunchy, creamy, spicy-ugh I want another plate now!

For our main we shared the breakfast burrito which came with beans, rice, tofu scramble, avocado, and potatoes. This was seriously so hearty and filling and perfect.

Again, we did not have dessert here…this seems to be a common theme with us! But due to the heat we had a cone and Mcflurry from Mickey D’s! Also somehow didn’t get a pic of this…bad blogger!

Let’s talk Arugula

I think it might be the summer heat that’s left me craving fresh salads all the time-including breakfast ๐Ÿ˜€

I’ve been loving mixing up greens and a particular green I’ve been enjoying throwing in is arugula. It goes great with some eggs for breakfast or into a salad for some extra flavor in your greens.

This peppery leaf can be a little underrated though. I feel like kale and spinach get a lot of the glory, but arugula is still a dark(ish) leafy green. It’s filled with antioxidants and who couldn’t use more of those?

It’s also got some vitamin C to help with boosting your immune system. It’s hard to imagine now with it being so hot, but when cold and flu season come up this might be a good mix-in for soups, omelettes, and other warm dishes.

Arugula contains vitamin A which is great for your eyes since it helps protect the surface of your eyes.

Did you know it also contains some calcium for strong and healthy bones? I don’t do dairy milk so getting in calcium wherever and however is pretty important to me and I know my bones will thank me later on.

There are so many different types of greens out there and they all have so much good nutrition in them so if arugula is not your thing that’s totally okay. I just wanted to highlight it because I think it’s a fun change up!

Random Foods I’m Loving

I’ve been loving a lot lately and I know from this blog you know how much I love food so here are some foods I’ve been really enjoying!

These snap pea crisps are light, crunchy and delicious. I like that they have a little bit of protein in them and they really satisfy my crunch tooth ๐Ÿ˜‰

Speaking of crunchy things these plantain chips are not filled with protein, but they are savory and delicious. These have been my favorite flavor recently!

This jackfruit curry from Trader Joe’s has been hitting the spot when I need a meal I don’t need to think about. It is spicy and flavorful!

I just can’t seem to get enough of s’mores this summer and so I keep eating them and eating them…

Last, but not least the roasted potatoes from TJ’s has been my go to for breakfasts. I’ve been making breakfast burritos every morning and these are the perfect addition to them!

Recent Dessert Faves

Let me make this super duper clear people these are not all of my favorite desserts. THAT would take a book and nobody got time for that…

While recently drooling over some food porn on my phone I couldn’t get dessert outta my head and now that I am typing this I am panicking thinking about all the delicious desserts I am about to miss because I have no recent pics….let’s take some deeeeeeeeep breaths iin and ouut phewwww

Okay let’s get on with the yumminess

This matcha soft serve from Tea Master is everything. The creamy texture and the potent matcha flavor combine to create this cool, light, and irresistible creation.

Donuts from SK Donuts make me super happy. Donuts from Sidecar also make me happy, but I have no recent pictures. Major takeaway? I love donuts.

This next one might not be technically a dessert, BUT it is sweet. I love pan fried plantains especially the perfectly ripened ones because they tend to be sweeter. It’s slightly crisp on the outside and sweet and soft on the inside. I would eat these all day!

Happy Days Cafe makes a mean churro, but did you know they make churro donuts coated in chocolate and sprinkles and you can add cookies n’ cream ice-cream to the side? Also, whipped cream.

PSA: Potatoes Do Not Kill

I think the title is pretty self explanatory, but the reason I am bringing up my love for spuds is because I feel like they have such a bad rep.

Listen, potatoes are not all bad. They are a good source of potassium which can help in regulating BP. If you’re eating them as fries maybe not so much, but a few fries here and there never hurt anybody either.

I preach and try to live moderation the best I can and I don’t believe in good or bad foods. I feel like there’s a cycle for all foods-one day it’s healthy and in 10 years from now it’ll be the worst possible thing for you according to some study.

I love potatoes and they help add some bulk to my breakfasts and help with satiety, but they also just make me happy. I don’t eat a huge pan of them, but having some thrown into a taco makes me smile.

Have a baked potato, eat a few fries…I promise they aren’t out to get ya!

Astro’s Doughnuts

You guys know I’ve been on a little bit of a doughnut kick recently and so I felt like I needed to post about Astro’s. Also, it’s July 4th and what’s more American than some fried deliciousness??

Astro’s serves doughnuts AND fried chicken…um what? Where have you been my whole life??

We came here one morning and skipped the fried chicken this time and stuck with the doughnuts. We ended up with this delicious box of (from top left to right) strawberry rhubarb, cherry pie, PBJ and the bottom row (left to right) is creme brรปlรฉe, vanilla glazed, and birthday cake.

The strawberry rhubarb and vanilla glaze were both really chewy, soft doughnuts. The vanilla glaze was sweet, mild, and mellow while the strawberry rhubarb had a zing from the strawberry glaze.

The cherry pie had some crunch from the sugar sprinkles on the outside and the filling was tangy and slightly sweet. Just like cherry pie!

The PBJ tasted exactly like a PBJ, but it was probably my least favorite because the jelly filling had made it a little soggy blargh!

The birthday cake was our only cake doughnut and it was a chocolate base. This tasted like a really yummy, rich chocolate cake. It was soft and the cake was slightly sweet, but the glaze is what really sugared it up! The bit of frosting piped in the middle was a perfect texture contrast since it was light and fluffy while the doughnut was pretty dense.
