Snack Fails

Happy Monday my people!

I am usually a pretty optimistic person and tryy to find the brighter side of things and as much as I don’t like starting the week with a “negative” post I thought this would be a fun one.

I don’t want you guys to make the same snacking mistakes I did and recently I’ve had quite a few fails!

The first and saddest are these Annie’s Crispy Snack Bars. They are supposed to be a “healthier” (read:cleaner) version of the beloved Rice Krispie treats, but alas they are not the same and I am not a fan. These seem almost too sweet and definitely don’t have that same vanilla marshmallow flavor as the other guy…if you have ever had a Rice Krispie treat and loved it-don’t bother with these.

I actually don’t even have these in my house anymore because I took them to work and let everyone else eat them. The Bear Naked Peanut Butter and Honey granola bites…dry as the desert. I could only eat 2 at a time because it took so long to just chew one of these down!

I really enjoyed Vegan Rob’s Cauliflower Puffs so I was certain I would enjoy the Brussels Sprouts Puffs. I wasn’t exactly wrong, but I wasn’t 100% right either. They are enjoyable for a puff, but honestly I’d rather just eat Hippeas than these. I was hoping for a Brussels sprouts flavor and there is zilch. There’s nothing bad about them, but I would not repurchase because there are other puffs that I enjoy eating more…

This next item is technically breakfast, but it could be a snack?! I enjoyed the Kodiak Cakes Pancakes so much I thought I would enjoy the waffles. One-hundo percento wrong! These are dry and lack flavor and I will definitely be finishing the box, but I will never get these again!

I don’t want you guys to worry that I will be throwing all this stuff out because I won’t. I’ll take the Annie’s to work and have my work buddies give them a shot and the puffs and the waffles I’ll finish up myself. I always feel really proud of myself when I buy something I don’t like and still get through it-I think that’s a part of #adulting.

Gobble

I’ve definitely done my fair share of food subscription boxes and have loved some and not so much others, but since we’ve been trying to cook more at home I felt like I needed some inspiration.

I Googled some boxes and really enjoyed the options that Gobble had for the week I needed and decided to take the plunge. We definitely had to think about narrowing it down to three recipes because there were a few that sounded really delicious.

In the end we ordered the honey harissa shrimp, Souvlaki marinated salmon, and the channa masala with eggs.

The first dish we made was the salmon. I found the instructions extremely easy to follow and the whole dish came together quickly with just a little prep work. The marinade was something I hadn’t had before and found it to be really lovely and fresh on top of the salmon. The salad on the side included orzo, cucumber, tomato, olive, and feta and was bright and delicious.

The second dish we cooked up was the channa masala with eggs. This was a different take on shakshuka (the tomato and egg dish). I know hubby was very excited about this one and he really liked it. I enjoyed it at the beginning, but for whatever reason as I continued to eat the texture started to bother me and started kicking my gag reflex into gear. I love channa masala and I love eggs, but together it didn’t work for me.

The last dish of our box was the honey harissa shrimp. This is a great weeknight meal for us because it’s light and healthy! This came with a broccoli and cauliflower “couscous” that you sautΓ© in a pan with golden raisins and almonds. I liked the shrimp, but I enjoyed the couscous the most. I didn’t think I would enjoy having raisins in the dish, but the sweetness was scrumptious with all the savoriness. There was an arugula “salad” that came with a garlic lemon tahini to toss it with and it added a nice bit of fattiness to an otherwise light dinner.

Because of having the sauces prepared and in a package ready to go and having little prep work the dishes came together super quickly. There were very few things that we needed to pull from our pantry-just oil, salt, and pepper.

When B and I talked about Gobble I mentioned how this would be great for busy people who have a lot on their plate and just want a home cooked nutritious meal. Because it’s so fast, it’s easy to throw together with a small amount of time.

I enjoyed making and eating the meals, but I honestly did not feel very inspired after getting through our whole box. I don’t know if it’s because we didn’t really cook much more than the protein and the other components were mostly about mixing things together and chopping…thinking back it might be this.

I always love trying out a new box and getting a feel for what it’s all about so more than likely I will try another box at some point and see how it compares. I hope you guys enjoyed this post!

Kodiak Cakes Review

Good morning everybody!

Today, I am bringing you a review of the Kodiak Cakes Protein-Packed Power Flapjacks in the buttermilk flavor. Phewww that was a mouthful!

I love finding more nutrient dense options of the things I already love and eat. I used to get the Kodiak Cakes pancake mix and make it myself, but these seemed like a great option for people who are super busy and need a quick breakfast or even just something easy to make at work with a microwave.

I enjoy pancakes and waffles, but I get full fast so I have a hard time having both pancakes and something else to make sure I get protein. If I just have a waffle or pancake I tend to be hungry again in about an hour or so. Nobody got time for that, so I wanted pancakes that had some protein to keep me fuller for longer.

When you open the box they have already packaged up each serving size to help make it easy if you do need to pack it up for work because you can just throw it in your lunch bag. The con here is that it’s not environmentally friendly…

Of course, it doesn’t matter how quickly you can make it or how much protein it has if it doesn’t taste good. Thankfully, this tastes like pancakes, but the texture is a little on the drier end of the spectrum. I don’t mind because I spread creamy peanut butter on and dip it in maple syrup, but if you’re planning on eating it plain just know it’s dry so bring almond milk to drink.

Mangoes Galore

I mentioned mango on my favorites list Monday, but I realized I didn’t know too much more about them other than the fact they are delicious!

A quick google search though taught me a few things about the fruit I absolutely adore…like did you know that mangoes are a good source of antioxidants? I didn’t, but now that I do…well it doesn’t change much to be honest because I would have eaten them regardless of their antioxidant benefits πŸ˜‰

They are also great at helping you digest food and keeping you regular from all the yummy fiber. Mangoes are pretty juicy too so between the fiber and hydration constipation should not be an issue (sorrynotsorry the nurse in me always comes out)

It is high in vitamin C which is great for your skin and I am a huge fan of eating my way into good health and good skin! Apparently while the fruit is young, green, and growing it is high in vitamin C and when it is fully ripe it is higher in vitamin A…

Loving

Hey sweet people!

I have had a few things piling up that I have been loving and wanting to talk to you about so I thought what better time than the present? Yeah?

Let’s jump right in starting with some fashion favorites πŸ™‚

I had bought a dress from Aritzia for a special occasion that was going to be happening in the summer! I loved it, it was beautiful. Then I went to TJ Maxx and found this beauty. It’s this blushy, mauve, nudey pink color with a beautiful floral pattern and fluttery sleeves. It’s a wrap dress that cinches me nice and tight with the tie at my waist (I do wrap it all the way around instead of just tying it on the side). It is a high/low style dress which is great for a shorty like me and Β the best part? It has pockets!!

Needless to say this won by a million miles and I ended up wearing it! I learned that it would have been much better for me to be patient because this dress came in under $30 while the Artizia dress was $70!

This next dress was also a steal at around $18! I found it at Target and immediately fell in love. I have a major love/hate relationship with the Target clothing section. It’s very hard to figure out my sizing there. I am usually an XS or smaller when it comes to dresses and anytime I try on XS there it can range anywhere from fitting beautifully to looking like I’m wearing a large trash bag. I am talking about within the same brand so it’s frustrating to say the least.

I was a little nervous going into the dressing room because I knew it could go any which way, but it ended up fitting like a dream! The buttons on the dress are functional, but they don’t go all the way down. It leaves this little rectangular open space that isn’t too noticeable because once you tie the dress at your waist it all bunches and flows together.

It feels so light and flowy and perfect for a summer day! I’ve worn this dress multiple times since I got it and have absolutely loved the versatility.

I love a good pair of earrings and while at the mall with my brother in law and his GF I found these beauties at Lucky. I love that they are hoops and have this sweet pearl detailing. I found them to be just so lovely and also very versatile. You can dress them up or down!

Moving on from fashion to food…

Summer fruit is a current obsession…I’ve literally just been eating watermelon for dessert after every meal. It is sweet and hydrating and I find it much more delicious than just drinking water πŸ™‚ Besides watermelon, berries have been so incredibly yummy as well…honestly any sweet, juicy summer fruit is a favorite!

Avocado toast with tomatoes on sourdough…I may have mentioned this before, but I just can’t seem to get enough. I have literally been having this with my breakfast every morning! I love the acidity and freshness that the tomato adds and with a little black pep-omg I have died and gone to avocado toast heaven!

What I eat in a day

I’m pretty proud of myself for actually managing to take pictures of a whole days worth of eats so let’s jump in and see what tastiness awaits!

Breakfast was so yummy with avocado sourdough toast topped with tomatoes and a very soft boiled egg. I did not want my egg this soft, but that’s what happens when you are learning how to use an electric stove. Our current apartment has an electric stove/oven and it’s definitely taking some getting used to…

Lunch included this bean and cheese quesadilla with some steamed broccoli and lots of hot sauce that wasn’t pictured.

Dinner included another piece of avocado toast and some left over Pad Thai from a couple of days ago. I don’t mind having a hodgepodge of delicious things for dinner even if they make no sense!

Oh the food we will eat…Pizzeria Mozza

Okay, if you have been reading my food blogs for a good period of time you will know we LOVE pizza. Our favorite types are NY style and Neapolitan. I’ve been craving a good Neapolitan pizza for a while and our go to place is usually Midici.

I wanted to spread our wings a bit and check out a pretty popular spot on Yelp-Pizzeria Mozza. We somehow ended up being able to get same night reservations for 2 at 8:45pm on a Saturday night-we called at 8:15pm. I was ecstatic!

We arrived and the place was filled with chatter and cheer! Seriously everyone was super nice and friendly. We got seated quickly and glanced over the menu before being torn on the appetizers.

We opted for the carrots with coriander and dill yogurt topping and fried squash blossoms stuffed with ricotta.

The carrots came out first and were hand down some of the best carrots I have ever had. They were pretty oily, but all the textures created a very satisfying carrot bite. The carrots were soft from roasting, but had great flavor. There were these strips of fried something on top of the pile of carrots, and on top of that this cooling yogurt dill sauce.

I had never had a squash blossom, but these were tasty! The outside was light and crunchy and the inside soft with the ricotta.

For our pizza we were torn between the Margh and the squash blossom. We went with the squash blossom! It was really good, but before I could finish my first slice I hit a wall and could not eat another bite. We boxed up the remaining two slices and I had them for breakfast the very next day.

I really enjoyed the slight bitterness of the squash blossom and the creamy contrast from the ricotta. It was essentially the fried squash blossom dish on a pizza minus being fried.

We had a really great dinner at Pizzeria Mozza and I would recommend checking this place out. It’s fun and friendly and delicious! What more could a girl ask for?

Food Favorites

I’m sure you’ve figured out from the title of this post what we will be talking about! I love food and my favorites change all the time so let’s start talking about these before I move on πŸ™‚

Both the hubs and I love a good gummy candy, but it’s super hard to find one that has no pork gelatin. AND if they don’t have it they tend to be super hard and not enjoyable at all. That is, until now! Trader Joe’s has these Scandinavian Swimmers (a knock off Swedish Fish). These are sooooo soft and the flavors are tasty! Try them if you love gummy candies!

This is one amazing hot sauce. It’s not just any hot sauce though it’s Peri Peri sauce. It’s spicy and tangy and so yummy! I dip my quesadillas in these all the time and it’s the perfect acid component. NOMS!

Okay, so my go to bread is usually sourdough, but I don’t like making PBJs with it. I really wanted some white bread, but still wanted some nutrients of whole grain. I found this in the grocery store and had to pick it up! It’s been really making my PBJs super yummy!

I love hummus (who doesn’t) and this Everything Hummus is everything. If you like everything bagels you will love this! I dip carrots, pita chips, crackers…whatever I can find in this. I bet it would make a pretty snazzy sandwich too πŸ˜‹

Recent Eats

It’s kinda been a crazy month or so in our household and because of that I haven’t been the best at taking pics of a full day of meals. I have on the other hand taken pics here and there of a few meals I’ve made and some we’ve had out.

I wanted to share them since I had them and I thought it would be fun!

We’ve been eating our share of broccoli in this house…whether it’s roasted or steamed. I’ve been having it with a delicious quesadilla.

I’ve been loving a simple slice of bread with some PB for a basic morning breakfast. It’s even better when I have some berries on the side or a banana to top it off πŸ™‚
