3 Years and Counting

I know I normally post on Mondays and Thursdays, but I had to switch it up a little bit this week because today marks 3 years since B and I have been married!

You guys, I am a sappy human and if you let me I could gush about how much I love marriage. The thing is though it’s not marriage that I necessarily love, but being married to my husband. He is #besthusbandever!

He is the most incredible person and does a million gazillion things each day to show me how much he cares on top of telling me! I feel like the luckiest girl in the world to be able to wake up next to him and have all my adventures with.

I can’t believe it’s already been 3 years! I guess time flies when you’re in love! Happy Anniversary babe! Love you!!

Being the Best You

Hello Friends!

I am so happy to be back and decided to do a fun little New Year’s post. I know it’s a little late, but I don’t think being the best you has to be a New Year’s resolution. It can be an anytime decision 🙂

That being said I have found a few things that leave me feeling at my best and I wanted to share those with you today!

Mental/Brain Health: When I have found myself in need of a brain break or feeling stressed, doing something like coloring helps calm me down. It’s focusing on something else and I get some clarity about the situation.

If you’re not a coloring fan I love this meditation I found on YouTube many years back!

Eye Health: This is something we all ignore until it becomes a problem! It’s important to get your eyes checked yearly. They give us so much and ask so little in return! Let’s give our eyes some love this year. Make sure your contacts/glasses prescription is current and correct!

After your check up, go and find your perfect pair by taking this quiz by Warby Parker. They have some seriously cute eye glasses and sunglasses. Remember that it’s important to protect your eyes from the sun!

Skin Health: It’s winter, but don’t forget about your skin! Whether it’s moisturizing or applying sunscreen it’s an important part of your health. Major tip by the way you should be doing BOTH whether it’s cloudy, sunny, snowy, rainy…whatever the weather!

Gut Health: Your gut can be considered your second brain. How your gut feels can affect how YOU feel. Not having proper bacteria in your stomach can cause you to feel tired and run down…you DO NOT want that! Take time to eat your fruits and veggies for some good fiber.

I’ve been loving kombucha as well to help keep my gut in check. Just be sure and check the sugar content before buying a bottle! Low sugar is the way I go for my ‘buch fix 🙂

Physical Health: It’s so important to take time to move. It doesn’t matter if it’s walking, dancing, or playing sports you gotta keep your body moving. It releases endorphins which in turn goes back to helping us with our mental health!

I enjoy yoga and using resistance bands when I’m working out at home. YouTube and Pinterest have some great ideas for both plus any other exercise you may be interested in.

Health is about ALL of you. When you’re strong and healthy as a whole you feel your best and that is a great goal to have!

Pink Lady Apple flavored kombucha? Yes, please! This is so good. Perfect amount of fizz and a little sweeter than other kombuchas I have tried.

These smoothies have been perfect for work. It’s a super easy way to get some cals in when I have no time to sit and chew. I love the mango, carrot and orange, and the green machine as well.

My 7 Things:

  1. I have a hard time picking one of anything. I am absolutely, positively no good at picking favorite colors or answering questions like “If you could only eat one thing for the rest of your life…” These are considered serious panic inducing moments for me. I will probably respond with 10 different answers and hope you don’t notice.
  2. I am not tech savvy and my fix to all problems is to turn off and turn back on. If that doesn’t work than I am usually at a loss as to what to do and will quickly text my husband or ask google.
  3. I love rainy days. The grayer and the rainier the better! It makes me want tea and grilled cheese and sweaters…but I guess I kind of always want those things so…
  4. I am terrible with directions. I could probably get lost coming home…thank God for GPS!
  5. If I could only take one thing to a deserted island I would take my husband. He is one of those people who could build a boat out of tree bark or something so we could get back. Also, I love the guy
  6. I eat cereal more often at bedtime than at breakfast time…anybody else do this?
  7. My thought process can start off in one place and end in a totally different place. If I try to back track to figure out what I was trying to say in the first place I will find out I have forgotten completely.

Faves on Fridays

Today I bring to you a few of my faves in the form of cake, beaches, and coffee! Enjoy!!

I discovered Nothing Bundt Cakes when a location opened in Oklahoma, and I have loved them since! I was thrilled to find them here in California. Their bundlets are moist and perfectly sweet with a creamy frosting! I have never had a flavor that I have been disappointed with…if you live near one of these please check them out!!

Pineapple Upside Down

I can’t swim, but I love beaches. There’s just something about having your bare toes in the warm sand or the anticipation of the waves reaching your feet as you wait along the shoreline…it just makes me so giddy!

TJ’s pumpkin spice coffee is seriously good. Like…So. Freaking. Good. I’ve casually mentioned before my dislike for the PSL so I was a little concerned, but TJ’s didn’t let me down. It’s been taking my fall experience to a whole new level!

Oh The Food We Will Eat…

Veggie Grill was literally the first restaurant I went to when I came to California. I immediately fell in love with the place. It’s all vegan (as far as I know), fresh, and delicious!

Korean Tacos, lentil soup, Bombay bowl

My husband had actually been to Veggie Grill before and so he had suggestions for what we should order. We split everything no matter where we go so we got the Bombay Bowl with blackened “chicken” and the Tofu Thai Wrap.

The Bombay Bowl had this amazing Indian-y curry flavor to it. The bowl contained steamed kale, roasted veggies, quinoa, cannellini beans, almonds, and on and on and was topped with this coconut base curry on top. This is still one of my husband’s favorite things from here. It’s flavorful, warm, and filling!

The Tofu Thai Wrap that isn’t on the menu, but can still be ordered was a great burst of flavor as well. It tends to be on the sweeter side, but contained fresh greens, shredded carrot, avocado. tofu (of course), and tempeh bacon (the best part) and wrapped up in a spinach (I think?) tortilla. It’s even better with Sriracha!

After that first experience we have been many, many times since then. I have had the opportunity to try the Sonoran Bowl and the Mediterranean Super Greens salad. Both were good, but I have many other things there that I would rather get.

The B.T.L.A. is one of those things. Avocado, tempeh bacon, lettuce, tomato, aioli, all on sourdough. All of the good things!

That bread though…

The crispy “chicken” is another favorite of mine, but I get the blackened “chicken” instead. It has some of the same ingredients as the BTLA, minus the bacon plus the “chicken.” This one is also higher in protein than some of the other menu items!

The cheeseburger is a win any day of the week with it’s Chao cheese slice, tomato, pickles, onion, and chipotle ranch. One of the best non-meat burgers I have ever had!

Quick Intermission

The hubby and I will be going on vacation so there will be no posts this coming week! We will be back late Friday so the show will go on come next Monday. I can’t wait to share our foodie fun with you guys!! See you then!

My Food Journey

Even though I have been eating my whole life I don’t feel like my food journey begin until I was in my tweens. What I mean is, until that moment I wasn’t doing much thinking about what I was putting in my body. You see, I was a chubby child (probably overweight at times). I wasn’t eating a ton of food, but I also wasn’t eating the right types of foods a lot of the time. I don’t think it clicked for me until I received a call from my doctor’s office saying I had borderline high triglycerides. I started eating more vegetables (this wasn’t terribly hard since my mom was a great cook) and added in more fruit to my diet.

Then I started college and moved away from home. My freshman year my eating habits were terrible-I had no set meal times and wasn’t eating very much. During my longer days on campus I could go all day with a granola bar and a bag of chips. I have no idea what I was thinking. Looking back on that I have no idea how I managed because nowadays this girl would be hangry if she went without food all day! I’m not sure what happened, but that changed after that first year. I ate more and found out that I tended to do better if I had prepped snacks around. All I will say about that is that I ate my weight in cantaloupe and pineapple during those days. Due to my newly found appetite I had my firsts with Thai food (to this day I crave pad thai like nobody’s business) and sushi (I love the raw stuff).

It wasn’t until after I was out of college that I really started paying attention to nutrition. I feel like this was when the light bulb truly went on for me. The switch that turned on that light? Food blogs! I had never been so excited about food. I started reading nutrition labels AND ingredient labels. I found out about shopping the perimeter of the grocery stores. I was already eating fruits and vegetables, but I was still eating quite a few processed foods. Instead of giving up on the foods I loved (pre-made baked goods ugh so good!) I started making them on my own. I knew exactly what was going into my food. It was wonderful!

I still love baking…and eating

Okay, so it was wonderful for a while until the day that I had the worst craving for some ice-cream. Yes, I could have tried making it myself, but I felt like I NEEDED some Ben & Jerry’s. I had never intentionally deprived myself of any type of food during all my years of living. I tried to fight the craving, but it just seemed to get stronger. I have had people tell me that when they have cravings for sweets, they eat fruit and it’s magically gone. My friends, I am not that person. I ate the fruit and I still wanted ice-cream. What is a girl to do? This girl got the ice-cream, ate the ice-cream and magically the craving dissipated into thin air. Funny how that works…

This episode lead me to finding out about the 80/20 lifestyle. I ate whole, nutrient filled foods 80% of the time and let myself eat whatever else the other 20%. This may sound crazy, but I actually love vegetables and sweets equally. Due to that love, I don’t need a ton of ice-cream or a ton of pizza to satiate my craving. I am okay with having a big salad and a couple of slices of pizza so the 80/20 lifestyle really seemed to hit home with me. It felt like something I could stick with!

It was something I stuck with until I started noticing some odd behaviors in myself. I felt guilty about not getting in my fruits and veggies. Life is filled with parties and dinners out and lunches and brunches and other fun things, but I wasn’t making any exceptions for these things. I had started eating 80/20 to not feel deprived and be able to eat what I wanted. Instead it seemed that I was just being harder on myself for not always meeting that 80/20, so I stopped.

I wanted to be able to cherish the moment and seize the day, not be concerned about my veggie intake all the time. Don’t get me wrong, I still eat nutrient dense foods a majority of the time. I just don’t beat myself up if I go a day (or three) without it. Once I stopped trying so hard to control my food I realized that my body would find balance. If I happen to have a weekend of eating that doesn’t contain as many nutrient dense foods then my body usually craves roasted vegetables and apples with peanut butter. There are days where all I need is a piece of dark chocolate for my sweet tooth and I crave whole foods the rest of the time.

I am happy to say that I feel like I have found balance with food. It hasn’t been smooth sailing to get here. I have had to fail (multiple times, mind you) to get to this place, but THIS place is wonderful!
