Happy Thursday my friends!

I mentioned a few posts ago that I’ve been in a more snacky mood recently which has been fun, but I’ve also had to reign it in to make sure I get my colors and protein.

To be completely honest I probably do a pretty okay job at getting in my protein, but I do what I can and don’t stress too much about it. I’m great at eating veggies and fruit so the colors part is a little easier for me 🙂

This was a yummy breakfast one day when I wanted something simple. I did eat half a plate of spinach before this while deciding on what to make for breakfast! Eggs, sourdough toast, and tomatoes noms!

Boom Chicka Pop has my heart with this sweet and salty kettle corn. I LOVE this stuff and have gone through more bags then I can count. If you haven’t tried it, you absolutely need to! It is crack!

We had lunch out one day and I got Panera’s pick two while the hubby got a bowl from Cava. I picked the chicken frontega and cobb salad and both were yummy. I definitely did not finish everything and had leftover salad later that day as a snack 🙂

Okay, so I constantly hear about these Mary’s crackers and I always go back and forth about trying them because to be completely honest I don’t know how I feel about paying $5 for a box of crackers! Recently, though I have been huge into cheese and crackers (going back to the snacking) and have been loving trying new ones out. These were on sale for $3 so I figured I would give them a shot and boy am I glad I did! They are nutty and crunchy and so good!

I’ve been eating them with guac, cheddar, brie, hummus, and just straight outta the box. They are so yummy!

Speaking of brie (and cheese and crackers), I’ve been loving these little individual brie bites from TJ’s. I like that they are portioned out and easy to eat. They are super creamy and delicious!

This meal is a perfect example of my recent snacky meals. I could eat this and then have grapes for dessert and be perfectly content. I want to say I would be content forever, but we all know that, that would be a BIG lie and I will be onto something else right after this post comes out 😅

This next item could be a snack or a dessert or your snacky dessert? I don’t know, but it is pretty darn good! These are a Costco find-Greek yogurt bars coated in dark chocolate. The chocolate is actually really creamy and not bitter like in most dark chocolate. The yogurt part inside is like the texture of soft ice-cream, but thicker. It is a little tart, but enjoyable. They go in your fridge so the texture stays consistent!

Both hubs and I have both been enjoying these. They are pretty small, but I am good with half of one usually. Right now, I prefer the vanilla over the strawberry, but that will probably change soon!

Tomato love

You guys know I love eating the rainbow whether that be with vegetables or skittles. Eating in color feeds your eyes and your stomach and I am all about that! Recently, I’ve been on a tomato kick and love having a few with basically every meal.

It adds a fun juicy texture, some sweetness, and amps up the nutrients in my meals. What more could a girl want?

Did you know that tomatoes are good for your heart health? Lycopene, that is found in tomatoes, can actually decrease the bad cholesterol in your body. There’s never a bad time to start taking care of your heart and if adding in some ketchup or eating a tomato or two can help, why not?

They lycopene in tomatoes also can help in preventing sunburn. I would love to say that I am on top of my skin regimen and wear sun screen every time I go out, but I most definitely do not so if tomatoes will help me out even a little bit with that I will take it!

The fluid in fiber in these delicious guys will also help you out in the digestive department…we all know that a sad gut is a major pain in the butt 😅 We all want to have happy tummies especially with all the cookies that we are consuming so adding in tomatoes can help make sure you stay nice and regular 🙂

I’m not sure if bathing in tomato juice will make skunk smell go bye since I have no experience there, but it does so many other wonderful things!

Meals Lately

I’ve been so busy posting about our trip, but that doesn’t mean that I have forgotten to take snaps of food we’ve been eating since being back home.

I won’t lie most of it is home food and I don’t know if that’s interesting to you guys, but that’s what I’ve been eating so that’s what I’ve taken pictures of 🙂

Let’s jump in!

This first meal was made in a hungry rush! I made a bean and cheese quesadilla and added an egg on top to make it “breakfast.” I feel like you could make anything “breakfast” if you add an egg to it-anyone else?

Donuts for dessert are always highly appreciated in this household. We adore SK Donuts! They have such soft, fluffy yeast donuts and they have a good variety of cronuts too!

This next meal was homemade burgers and fries! Such a simple meal, but so yummy 😋

We happened to be at Century City and I could feel my blood sugar crashing so we stopped by Eataly and I had half of this for a snack. It was a cacio e pepe pizza and it was E.V.E.R.Y.T.H.I.N.G.

These apple chips were breakfast dessert one particularly ravenous day. I really enjoyed them! I don’t remember ever having apple chips other than in the Fuji apple chicken salad from Panera and I can say I am a fan!

Low-Carb Shrimp Fajitas

By now you guys know I like simple, easy to throw together meals ESPECIALLY during the week. These fajitas were just that…they were also unintentionally low carb.

I was initially thinking tortillas, but the idea of spicy shrimp and fajita veggies in a cool, crunchy lettuce wrap wouldn’t leave my head so here we are-lettuce wrap and all!

I chopped up my bell peps, red onion, and jalapeño for my veggie mixture. I also chopped up some onions, jalapeños, and grape tomatoes for my chunky guac at the same time 🙂

I cooked my veggies first in my favorite pre-made taco seasoning from Trader Joe’s and then did the same with the shrimp. I did it separately since shrimp tends to let out quite a bit of liquid and I didn’t want to sog up the crisp veggies.

While I did the cooking hubs mashed up the ‘cados for guac and added salt and chili powder to season.

I ended up piling my fajita mixture into some fresh romain lettuce while the hubs made a fajita salad of sorts.

It was quick, yummy, and delicious!

One Pan Chicken and Veggies

I love a good easy, dinner during the week but who doesn’t? I’m not going to give you a recipe or go through a step by step with you because there are a MILLION recipes out there for one pan chicken and veggies, trust me!

I will tell you that I used a chicken thigh because it is a more forgiving part of the chicken. If you overcook it a little, it won’t tell your dinner guests 🙂 I did take the skin off, but leave the bone in.

I used veggies that would be okay with hanging out in the oven a little while longer like potatoes, carrots, and red onion. I added in broccoli because I don’t mind my broccoli a little charred and it is supposed to be a one pan meal, right??

This meal is even better because you can use whatever marinade/seasoning you want. If you’re craving Indian you can do curry powder. Mexican Monday? Taco seasoning maybe?! I think you get the gist.

I found a balsamic vinegar marinade on Pinterest and ran with it because it had some ingredients that I needed to use up and it sounded delicious!

This turned out very well! I love roasted veggies and the chicken thigh was juicy and flavorful.

Full Day of Eats

Welcome back to another FDOE. This is from a busy Friday filled with errands and running around but ended with movie night and quality time with bae 🙂

I started my morning off with a yummy breakfast burrito! I don’t have a lot of time to make myself breakfast on days I work so on days I’m off I really enjoy taking my time to make a good one–recently it’s been these burritos!

I ran around for some errands and by the time I got home it was almost 2pm so I threw together this delicious salad. It had all the leftover baby kale, sesame seeds, goat cheese, and some rotisserie chicken. Unpictured are the plantains I had on the side and the super sweet, juicy nectarine I had for dessert.

Once the hubs got home we made plans for dinner and a movie. We went to Marilyn’s Mediterranean Kitchen. The hubs LOVED this place and I thought it was pretty excellent too.

We got a chicken shawarma plate and a kuftah kebab plate. They came with two sides of our choice so I picked hummus and rice and the hubs picked veggies and baba ghanoush.

Everything was delicious! Hubby’s favorite was the kuftah kebab and I couldn’t get enough of the hummus. The service was really great and everyone was so friendly and helpful.

They were so nice and found out that it was our first time and gave us a tiramisu. It was so good and such a perfect ending to our meal!

We headed out to watch The Spy Who Dumped Me and I thought it was great. I was almost in tears laughing, but I may have been the only one. The hubs thought it was a good movie, but nothing to write home about.

Let’s talk Arugula

I think it might be the summer heat that’s left me craving fresh salads all the time-including breakfast 😀

I’ve been loving mixing up greens and a particular green I’ve been enjoying throwing in is arugula. It goes great with some eggs for breakfast or into a salad for some extra flavor in your greens.

This peppery leaf can be a little underrated though. I feel like kale and spinach get a lot of the glory, but arugula is still a dark(ish) leafy green. It’s filled with antioxidants and who couldn’t use more of those?

It’s also got some vitamin C to help with boosting your immune system. It’s hard to imagine now with it being so hot, but when cold and flu season come up this might be a good mix-in for soups, omelettes, and other warm dishes.

Arugula contains vitamin A which is great for your eyes since it helps protect the surface of your eyes.

Did you know it also contains some calcium for strong and healthy bones? I don’t do dairy milk so getting in calcium wherever and however is pretty important to me and I know my bones will thank me later on.

There are so many different types of greens out there and they all have so much good nutrition in them so if arugula is not your thing that’s totally okay. I just wanted to highlight it because I think it’s a fun change up!

Tocaya

Tocaya describes themselves as “modern organic Mexican cuisine” and I can say I agree. They use organic ingredients to create a twist on Mexcian flavors. However you spin it I can say the food is delicious!

This was our first trip to Tocaya and it included a bowl, a couple of tacos, and a couple of sides. We had to at least get through part of the menu!

We got two delicious tacos: a Barrio Style and the other Baja Chipotle.

The Barrio Style came with roasted tomato salsa, avocado, red onion, and cilantro. We picked beef picadillo and jalapeño jack for our protein and queso.

The Baja Chipotle came with cabbage, sweet chipotle sauce, vegan chipotle crema, and cilantro. We picked sea bass and got the cheese (I can’t remember which) on the side.

Both tacos were super flavorful and bright, but the winner for both of us was the Baja Chipotle. The sea bass was beautifully seasoned and it paired well with the other flavors in the taco.

We picked two sides to go with our tacos: the roasted cauliflower and the Barrio Fruit bowl. The cauliflower tasted like curried cauliflower and it was good, but not amazing. The fruit bowl was seasoned with lime and chili and was super bright, but I was hoping for sweeter fruit?! Both sides were good, but I would definitely check out some of the other sides next time.

The bowl we went for was the Fajita Del Rey which came with sautéed poblano peppers and onions, Spanish rice, black beans, vegan chipotle crema, guac, and pico de gallo. We picked chicken tinga as our protein and got the queso fresco on the side. I LOVED this bowl and would honestly get it again.

It had some spice and planty of creaminess from the guac and crema to cool it down. Each component was delicious on it’s own, but even better when mixed together. The chicken was the star in this bowl-it was warm and shredded and perfectly cooked.

Post dinner I still needed something sweet so we stopped by a macaron place and I got an almond and passion fruit macaron. Looking at these I feel like I need a couple more right now!

PSA: Potatoes Do Not Kill

I think the title is pretty self explanatory, but the reason I am bringing up my love for spuds is because I feel like they have such a bad rep.

Listen, potatoes are not all bad. They are a good source of potassium which can help in regulating BP. If you’re eating them as fries maybe not so much, but a few fries here and there never hurt anybody either.

I preach and try to live moderation the best I can and I don’t believe in good or bad foods. I feel like there’s a cycle for all foods-one day it’s healthy and in 10 years from now it’ll be the worst possible thing for you according to some study.

I love potatoes and they help add some bulk to my breakfasts and help with satiety, but they also just make me happy. I don’t eat a huge pan of them, but having some thrown into a taco makes me smile.

Have a baked potato, eat a few fries…I promise they aren’t out to get ya!

ABJ Greek Yogurt

It’s been hot here in beautiful LA, but on one particular hot day a hot breakfast did not sound appetizing.

I dreamed this up while at the gym and made it a reality once I got home. It was seriously one of the best bowls of yogurt I have ever had.

I used plain fat free Greek yogurt because that’s what I had, TJ’s almond butter, and TJ’s blueberry preserves, with some Sprout’s bulk bin granola (chocolate hazelnut flavor) to make this.

It had good protein from the yogurt and AB, the preserves and granola gave me some carbs to pep me up post workout, and the AB and granola had some fat to help satiate and leave me full and satisfied!

I was a little weary about putting nut butter in yogurt. I don’t know why, but it never sounded like a good idea until this day. I guess hunger fuels delicious creations 😉
