Snacks I do like

After my post on snacks that failed me I felt a little bad…well bad enough to show you guys that there are some snacks I really like.

Some of these are old and have been in previous favorite posts and some are new, but they are all delicious to me.

These plantain chips are an old favorite…I feel like I’ve loved these for years now. They are crunchy and savory and I would pick these over potato chips for snacking. I do try to pair them along with something a little more filling like baby carrots since I could mindlessly eat the bag otherwise!

I love these little granola bites. They say each pouch has the same nutrients has a serving of vegetables, but I like them because when I need something sweet but also a little more nutritious these fit the bill.

Almonds are a great nut and have some protein, fat, and just taste delicious when roasted and salted. I like these particular ones from Trader Joes. They are so easy to stash in my bag or take in the car to prevent any hangry episodes.

Speaking of Trader Joes, I discovered these grapes while doing some grocery shopping. They were sampling them and I was intrigued by the shape. I adored them because they were sweet and had to get some! Definitely a fun fruit to try out and we ate them up pretty quickly!

I know I’ve talked about Mary’s Crackers, but these everything seasoning ones are new to me and I really enjoyed them. I love the garlicky flavor that it has and pairs well with any hummus. I haven’t tried it with cheese yet, but I’m sure it would be delicious…now that I say that a cheese board with these crackers seems like an incredible idea!

This savory Tex-Mex trail mix from Target is not a new favorite, but I recently repurchased and remembered how much I enjoyed these last year. I don’t need to tell you guys how fun it is to eat trail mix-the different textures and flavors prevent boredom so a pretty great snack for me.

Weekend Randomness

Weekends for me aren’t necessarily Saturdays and Sundays…they are basically any days that I am off and sometimes that falls on an actual weekend and sometimes it falls on a Tuesday. That is the beauty of inpatient nursing…that being said I did have an actual weekend, but a long one so I thought it would be fun to share that with you.

On days that I am off and hubby works I try to cook up something yummy, nutritious and different then our quick throw together stuff. Salmon is definitely one of those meals that gets thrown into rotation-hubby loves it when salmon is on the menu and it fits into that yummy and nutritious category.

We had this piece of salmon with some roasted cauli and since we had a few carrots leftover I roasted those up too.

I’ve been enjoying rice bowls for lunches/dinners recently. I have honestly never been a rice person, but recently I’ve been craving it. I love throwing in whatever veggies we have on hand along with some beefless ground and this green sriracha from Trader Joes.

When hubby and I finally had the chance to go out we hit up a Mediterranean spot, The Diplomat, to get in some good eats. To start we had the hummus, pickles, and falafel.

We ended up sharing the lamb chops for our main. I think the hummus may have been one of my favorite parts of the meal. It was so smooth and creamy!

On Sunday morning, post HIIT I toasted up a Kodiak Cake waffle (yes, still eating them!) and spread some peanut butter and mashed up some raspberries on top. Will be doing this again!

During our grocery run we ended up hungry and found ourselves in the car eating rotisserie chicken and some cake we picked up from Porto’s. The carrot cake was my favorite outta the two and I will definitely be adding that to my list of items to get from there.

Loving

I have some very random things that I have been loving recently and some of them were inspired by some of my favorite blogs to read!

We are always running out to buy cards for birthdays, anniversaries, etc and recently through Mackenzie I discovered you could buy some gorgeous cards from Amazon. I took the leap and got a variety box of birthday cards and am absolutely obsessed with them! They are each a different design and are absolutely beautiful!

I have a love/like relationship with this next item. I can’t quite decide how I feel about these cotton candy grapes. I can’t seem to eat a whole bunch of them in one sitting like I can most fruit, but at the same time they taste so good and do a great job at curbing my sweet tooth.

Blaze Pizza is such a great option for a quick, yummy pie that has a great chewy crust and bubbly cheese. I always forget how much I love this pizza until I have it again and then I am obsessed all over again.

I love a good french fry, but honestly I don’t always feel so great after eating them so when I discovered carrot fries on Carly’s blog I was super excited. I love roasting them up with some salt, pep, and chili powder. Hubby loves them more than sweet potato fries and that’s a big win in our house!

We recently got Hulu and I have been binging on everything especially some HGTV. I used to love watching Fixer Upper, but at this point I’ve seen all the episodes and needed another bingeworthy HGTV show and found it with Good Bones. I love this mom and daughter duo!

I’m not big into energy drinks but this Alani Nu Hawaiian shaved ice is so yummy! I could kinda go for one right now…

Snack Fails

Happy Monday my people!

I am usually a pretty optimistic person and tryy to find the brighter side of things and as much as I don’t like starting the week with a “negative” post I thought this would be a fun one.

I don’t want you guys to make the same snacking mistakes I did and recently I’ve had quite a few fails!

The first and saddest are these Annie’s Crispy Snack Bars. They are supposed to be a “healthier” (read:cleaner) version of the beloved Rice Krispie treats, but alas they are not the same and I am not a fan. These seem almost too sweet and definitely don’t have that same vanilla marshmallow flavor as the other guy…if you have ever had a Rice Krispie treat and loved it-don’t bother with these.

I actually don’t even have these in my house anymore because I took them to work and let everyone else eat them. The Bear Naked Peanut Butter and Honey granola bites…dry as the desert. I could only eat 2 at a time because it took so long to just chew one of these down!

I really enjoyed Vegan Rob’s Cauliflower Puffs so I was certain I would enjoy the Brussels Sprouts Puffs. I wasn’t exactly wrong, but I wasn’t 100% right either. They are enjoyable for a puff, but honestly I’d rather just eat Hippeas than these. I was hoping for a Brussels sprouts flavor and there is zilch. There’s nothing bad about them, but I would not repurchase because there are other puffs that I enjoy eating more…

This next item is technically breakfast, but it could be a snack?! I enjoyed the Kodiak Cakes Pancakes so much I thought I would enjoy the waffles. One-hundo percento wrong! These are dry and lack flavor and I will definitely be finishing the box, but I will never get these again!

I don’t want you guys to worry that I will be throwing all this stuff out because I won’t. I’ll take the Annie’s to work and have my work buddies give them a shot and the puffs and the waffles I’ll finish up myself. I always feel really proud of myself when I buy something I don’t like and still get through it-I think that’s a part of #adulting.

Labor Day Weekend

The only thing I love more than a good relaxing weekend is a good relaxing weekend of good eats!

I actually have some eats from the week mixed in because good food is good food no matter when you eat it. Also, I think my brain is tired so forgive me if I say some off the wall things in this post 🙂

On Tuesday I had this simple breakfast of egg frittata from Trader Joes, a waffle and some blackberries. The egg frittata has been compared to the Starbuck’s sous vide egg bites, but this was not my favorite on it’s own. I did put it in a tortilla later in the week with some cheese and enjoyed it MUCH more that way.

For dinner that night we had some leftover ground beef so hubby whipped up some burgers and we are still on the carrot fries kick!

Fast forward to Thursday night our Gobble box arrived. Since we both had work and hubs actually had to work late we made a dish from the box on Friday night: Souvlaki marinated salmon…I’ll do a whole post about this later on this week!

Saturday morning included workouts and grocery shopping! I was starving and decided to pick up a turkey pesto sandwich from Sprout’s. Sometimes a sandwich and some potato chips just hits the spot and it deffo did…noms! I was only able to eat half the sammie and half the chips before I was full.

We made an early dinner (linner, really) of the baked eggs in channa masala from Gobble before hubby had to head out to a work thing. I ended up hanging out and binging on all the reality TV on Hulu.

It was a little past 10:30pm when he was heading home and I was feeling the hungers again and Blaze sounded like a great idea so we picked me up a simple pie. I ate the whole things minus 2 slices. The hubs ate one of those….

I ate the last slice with some tomatoes the next day (banana for dessert)!

Sunday was our first full day off together so we made the most of it and headed to Santa Monica. I really wanted Sidecar Doughnuts and went for their yeast glazed doughnut. They are just so good! You can’t go wrong with this place.

We were both pretty tired as we walked around so we decided to grab a snack. I’m normally not an energy drink person, but I just felt like the day called for it. I saw this Alani Nu in Hawaiian shaved ice and felt like it sounded so incredible. The hubs found some gummies.

The energy drink was DELISH! LOVED IT! The gummies were not great, BUT hubby totally enjoyed them. He loved them so much he bought a few more the next day!

We picked up a few baked goods and headed home to make some burgers (we have a serious problem with burgers).

Burgers-delicious! Sadly dessert did not go as well…we had stopped by Milk Bar and Alcove. The cookie and birthday cake truffles from Milk Bar were good, but for whatever reason the cakes from Alcove were not.

Alcove has been our go to cake spot and we were a bit bummed, but what is a girl to do?

The next day we did some more grocery shopping for the week and made our last Gobble dinner. It was a honey harissa shrimp dish!

We finished up any left over dessert and called it a weekend!

Fishapalooza

The title is not my best work, but sometimes something gets stuck in my head and I have to go for it…ya know?

We’ve been trying to up our fish game in this house and what I mean by that is just eating more fish. I pretty much eat vegetarian when we’re cooking at home and B has some chicken, but having a couple of servings of fish a week is really great for you.

We love salmon and have been enjoying the wild salmon from Sprout’s, ahi tuna, shrimp lettuce wraps, and even some sushi.

Blackened salmon has been the go to-I just love the spicy flavor and the crispy outside. You guys know we could eat roasted veggies everyday if you let us. I was totally inspired by Carly’s carrot fries and had to make some!

I will be completely honest and tell you that this ahi tuna did not turn out as great as we thought it would, but it still counted as another serving of fish 😉

If you’ve been reading this blog for long enough, I know I have posted about these lettuce wraps more than once. They are so delicious, fun, and easy! This is a great way to get in some seafood AND you could do it with salmon, seared ahi, whatever you prefer!

Hunida’s blogs always leave me craving sushi so while at Sprout’s I saw some rolls and picked them up. Grocery store sushi can be hit or miss, but these were good and I would pick them up in a pinch!

Fish is a pretty quick thing to cook up (it literally takes minutes) so I think it’s pretty good for a week day meal. I know the hubby and I have really been enjoying having fish back in our meals.

Anaheim adventures

We went on a mini little road trip to Anaheim and found ourselves close to the Anaheim Packing House. We had decided to grab lunch at Cultivation Kitchen so we stopped there first.

Cultivation Kitchen is a really beautiful, earthy space that’s filled with light and greenery. We ordered, took our number, and got seated.

Hubby had ordered a mix-n-match healthy plate with organic chicken, roasted cauliflower, and roasted broccoli. His dish was a plate of heavenly flavors. If we ever get the chance to come back I will definitely be doing a healthy plate!

I ordered the SLT grilled grass fed beef, avocado, arugula, caramelized red onions, roasted tomatoes and red peppers with smoked tomato-jalapeno jam. The sandwich was very good, but a little on the greasy end. The salad served on the side was bright and fresh and delicious.

I think this is a good spot if you’re looking for some whole, yummy tasting food. Of course, you guys know I need something sweet and much to my luck there was a Honey & Butter trailer right outside the restaurant.

This place has some of the best macarons I’ve had. Their buttercream filling is so yummy! I got a fruity pebbles and a milk and honey flavored one. They were both so good, but my favorite was the fruity pebbles.

After our lunch we walked around the Packing House and took in some music. We hung out until it was time for us to meet a friend for some tea and walking around. It’s always a fun foodie adventure coming to/near the Packing House.

August Update on Cutting Down

I think my post went up for “cutting down” towards the end of July, but I started the whole process the beginning of July when we moved so I thought it would be a good time to give an update.

I’m not sure if I mentioned this, but I did unsubscribe from emails from a lot of retailers. I felt like between ads on Insta, YouTube, and Facebook I didn’t need more temptation. This has helped a lot because I’m not getting pummeled with deals from my favorite spots to shop AND I don’t feel like I am missing out on any great deals since I don’t know about them to start.

As a side note, this has made it much easier to clean out my inbox. I don’t wake up to 50 email notifications every morning.

I will say though that I haven’t felt tempted to buy anything yet. I am very surprised by this because I thought the itch would have started by now, but I am grateful it has stayed away. I don’t know if it’s because I am still settling in and figuring out a schedule and have been dealing with other stressors.

I do wonder if once things get into more of a normal routine I will feel more tempted to run to TJ Maxx or Target. Speaking of Target, the Target I live around has an incredible selection of clothes and accessories. I do avoid going into that department at all costs, but it does sometimes call to me as I am heading to check out.

I have learned about some gaps in my clothes and I have learned a little more about my likes and dislikes. For example, I learned that I enjoy a wider strap when it comes to dresses/tops and not a spaghetti strap mostly because I find strapless bras annoying. I’ve also noticed that I avoid certain pieces of clothing because of comfort, the way it looks on me, pattern, straps, whatever it may be.

Last but not least, because I don’t have the option of buying new clothes I have been doing a better job and wearing pieces I normally don’t and making sure I rotate through my clothes. I’ve definitely been wearing the crap outta all the clothes I brought in preparation for a hot summer.

I know it’s only been a little more than a month, but I am pretty proud of myself. I am keeping my fingers crossed that I am able to complete this challenge! I’ll do my best to continue to do a monthly update.

Coronado

Good morning!

On a Tuesday morning I headed out with a friend and co-worker to the last session of our leadership conference. I don’t know if you remember, but for the session in April and June hubby was able to come along. Sadly, this time around he had work and couldn’t make it. I was bummed, but super grateful I didn’t have to make the trip alone!

I was excited to have the opportunity to finish the program, but also sad that it would be the last time we would be coming. It was a really great conference and I learned a lot about leadership and myself.

While in Coronado, we made the most of it and had some yummy food.

The first night we went to Maretalia. It’s a lovely Italian joint on the Island and we walked to it. The walk felt long since we were all hungry, but once we got there we were in carb heaven!

After sitting down we were offered bread and a lovely gentleman came around with the bread choices. There was no choice for me other than the big fluffy slices of focaccia. The bread was salty and soft and served with softened butter in a pool of olive oil with a piece of roasted garlic on top. I could eat that bread everyday for the rest of my life!

I ordered the shrimp campanelle and boy was this good! The shrimp were perfectly cooked and there were tomatoes that added brightness and acidity. I asked for some parm on top which added a nice flavor and depth. The pasta was cooked al dente and I am sitting here drooling thinking about this dish.

By the time we left the sun was starting to set and our walk home was much easier with the carbs in our belly. We were all tired from our day of traveling and conferencing that we headed back to the hotel to settle in and get some rest.

I had a hard time sleeping-always do without hubby-but I finally gave up, woke up a little earlier than planned and headed to the gym.

As much as I enjoyed the conference it was a lot of sitting and I am not used to that much sitting. The morning workouts gave me life and helped with the restlessness that sitting for long periods causes me to have.

After conference we made dinner plans and walked to another spot on the island-Miguel’s. I had been craving tacos and tortilla chips and queso and had gotten many recommendations for this place. It was another 30 minute walk to this place (we passed Maretalia on the way).

Once we arrived we were seated and served warm chips, salsa, and queso. The chips were salty and crispy, the queso was creamy, and the salsa was bright. It was really difficult to stop eating them.

The server was really nice and let us know we could order two different kinds of tacos so we could try more than one. I ordered a swordfish taco and a ahi tuna taco. The swordfish was grilled and flavorful and served in a soft corn tortilla. The ahi tuna was seared and chopped up and served in a hard taco shell.

If I am being completely honest, I ate most of the ahi tuna taco and half of the swordfish taco. I ended up eating the rest of the swordfish, but not the whole taco. It was served with rice and beans and I think I took one small bite of each, but was too full to bother even trying to eat anymore.

We walked to Hotel Del Coronado and saw these incredible sand castles. I think there had to have been a competition of some sort. We ended up unintentionally taking the long way home so it was a long walk, but we didn’t mind. We were fueled with yummy food and beautiful weather.

After the conference Thursday we headed back home. I was super excited to see hubby, but by the time I got back he was still at work. I did come home to this which was so sweet. He is honestly the best husband ever!

We ended up going out to sushi that night at Sushi Hachi. We ordered some edamame and a few rolls. We both really enjoyed these and they were on the fresher end of the spectrum rather than the fried or cooked rolls we sometimes get. I feel like this might turn into one of our regular sushi spots 🙂

Kodiak Cakes Review

Good morning everybody!

Today, I am bringing you a review of the Kodiak Cakes Protein-Packed Power Flapjacks in the buttermilk flavor. Phewww that was a mouthful!

I love finding more nutrient dense options of the things I already love and eat. I used to get the Kodiak Cakes pancake mix and make it myself, but these seemed like a great option for people who are super busy and need a quick breakfast or even just something easy to make at work with a microwave.

I enjoy pancakes and waffles, but I get full fast so I have a hard time having both pancakes and something else to make sure I get protein. If I just have a waffle or pancake I tend to be hungry again in about an hour or so. Nobody got time for that, so I wanted pancakes that had some protein to keep me fuller for longer.

When you open the box they have already packaged up each serving size to help make it easy if you do need to pack it up for work because you can just throw it in your lunch bag. The con here is that it’s not environmentally friendly…

Of course, it doesn’t matter how quickly you can make it or how much protein it has if it doesn’t taste good. Thankfully, this tastes like pancakes, but the texture is a little on the drier end of the spectrum. I don’t mind because I spread creamy peanut butter on and dip it in maple syrup, but if you’re planning on eating it plain just know it’s dry so bring almond milk to drink.
